Avocado on toast is one of the most popular items for breakfast and brunch right now and coffee shops are charging a pretty penny for the relatively simple dish. At For The Love of Breakfast we thought about this breakfast delight, and how we could make it a little more exciting and also, a brunch to stay home for! When thinking about breakfast favorites, a cream cheese bagel with salmon immediately springs to mind, and so does avocado on toast. So we thought, why not combine the two? Off to the kitchen we went to experiment?and?we are happy to report that the result is super tasty! Dare we even say, better than the originals! (We even swapped the cream cheese for feta for a more healthy meal).
This dish is very easy to prepare and you will only need a few ingredients. Happy cooking and have a great breakfast!
Ingredients:
1 sour dough roll halved and toasted
1 small can red salmon
1 peeled, stoned and sliced avocado
2 tablespoons Danish feta
1 heaped tablespoon baby oregano leaves
1 lime wedge
Salt and pepper to taste
Method:
Place the toasted roll halves onto a serving dish
Lay the slices of avocado on top
Place pieces of the red salmon onto the avocado
Place on pieces of the feta
Sprinkle on the baby oregano leaves
Salt and pepper to taste
Garnish with the lime wedge
