So simple, yet so flavorful this poached egg and tomato breakfast is really easy to make with only a few ingredients. At For The Love of Breakfast we love to experiment and add herbs and spices where we can. This “breakfast bruschetta” tastes fantastic with the sprinkling or oregano and chopped chives. The olives also really bring out the flavor.
Ingredients
1 free range egg poached
1 slice of toasted wholemeal Vienna bread
1 large peeled and seeded tomato
1/2 teaspoon of dried oregano
1 desert spoon of chopped chives
1 olive sliced
Salt and pepper to taste
Method
Place the toast on a serving dish
Stir the dried oregano into the chopped tomatoes
Place on top of the toast
Lay the sliced olives on top of the tomatoes
Place the poached egg on top of the tomatoes
Sprinkle with the chopped chives
Salt and pepper to taste
