Peanut Butter and Oatmeal Breakfast Bars

We are nuts about this tasty and nutritious breakfast bar featuring peanut butter and oatmeal! Oatmeal bakes are the perfect on the go breakfast and can be made ahead of time and frozen.

Ingredients:

  • ? cup peanut butter (creamy or crunchy)
  • 2-4 tablespoon honey
  • 1 cup mashed ripe bananas (about two bananas)
  • 2 eggs
  • 1? cup milk (any kind, we used two percent)
  • 2? cups quick oats
  • 2 tsp cinnamon
  • 1? tsp baking powder
  • ? tsp salt
  • ? tsp nutmeg
  • ? cup peanut butter chips

Method:

  1. Preheat oven to 350 Fahrenheit and lightly grease an 8×8 inch baking dish
  2. In a medium bowl, whisk together peanut butter, honey, bananas, and eggs, and milk
  3. In a large bowl, whisk together oats, cinnamon, baking powder, salt, and nutmeg. Stir in wet ingredients and peanut butter chips
  4. Pour batter into prepared baking dish and bake for about 30 minutes or until toothpick inserted in the center comes out clean
  5. Once cooled, slice into bars. Can be frozen or stored in the fridge up to one week.
