Olive and Egg Breakfast Bites are oh so simple to make and really darn tasty. Great for breakfast and can be frozen and stored for a later date too. Here at for The Love of Breakfast, we actually just had a few for lunch! When it comes to cooking, we throw the rules out and experiment. Same can be said for when we enjoy the goods!
Also, good to note, that we only like using free range eggs for our recipes. Free range eggs come from chickens who do not live in battery cages, the are permitted to spend time outdoors and lead a much better life doing so! We love our animals at For The Love of Breakfast and like to make sure we support them leading the best lives possible. We don’t want to preach, but buying free range is a great way to show them we care.
Ingredients
2 free range eggs
3/4 cup of milk
1/2 cup grated cheddar cheese
1/2 cup of?plain flour sifted
2 spring onions?chopped
1/2 tablespoon of melted butter
10? stoned and chopped kalamata olives
Salt and pepper to taste
Method
Preheat oven at?350F
Prepare patty tins
Beat eggs and milk together
Add the grated cheese, onion and melted butter
Gradually add in the flour
Salt and pepper to taste
Stir in the chopped olives, do not over mix
Place tablespoonfuls of the mixture into the patty tin
Bake for 20 -25 mins until golden brown on top
