Oatmeal Chocolate Chip Breakfast Muffins

Muffins are a great grab and go breakfast that can be made ahead and frozen for convenience. These oatmeal chocolate chip delights are perfect for a sweet start to the day.

Ingredients:

  • 1 ? cup instant oats
  • 1 ? cups milk (any type, but we used two percent)
  • 1 egg
  • ? cup vegetable oil
  • ? cup brown sugar
  • 1 cup semisweet chocolate chips
  • 1 ? cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Method:

  1. Combine oats and milk in large bowl and allow to stand for 20 minutes
  2. Preheat oven to 400 degrees fahrenheit and lightly grease each cup of a 12-cup muffin tin
  3. Stir egg, oil, sugar, chocolate chips into the oat mixture
  4. Combine flour, baking powder and salt in separate bowl
  5. Add flour mixture to oat mixture
  6. Fill each cup of one 12-cup muffin tin 2/3 full
  7. Bake for about 30 minutes
