Mini or regular sized, these Peanut Butter Cupcakes are delicious at any size! And the frosting.. Well, let’s just say you are going to want to eat one of these for breakfast, lunch and dinner!
We really do love sweets for breakfast here at For The Love of Breakfast. There is nothing better than pairing up a great little cupcake with a nice hot cup of coffee for a sweet start to the day.
Don’t forget to let them cool completely before slathering with frosting as it never works well and you will end up with a runny topping and a sticky mess. We know it’s hard to wait before diving in but, in the long run, the wait is well worth it!
Ingredients
1 3/4 cups self raising flour, sifted
1/2 teaspoon salt
160g unsalted butter, softened
1 cup castor sugar
3 large free range eggs, beaten
1/2 cup sour cream
1 teaspoon vanilla extract
Chocolate to grate
Method
Pre heat oven 180
Prepare muffin tins – mixture makes 12 large cupcakes or 24 small
Add the salt to the flour and set aside
In an electric mixer, cream the butter and sugar until light and fluffy
Stir in the peanut butter until combined
Add a little of the beaten egg at a time, mixing well after each addition
In a separate bowl mix together the sour cream and vanilla
On a lower speed gradually add the flour and sour cream mix alternately until combined. Do not over mix
Place spoonfuls of the cupcake mix into the patty tin, filling each one up to 3/4 full
Bake cupcakes for 15 – 20 minutes until lightly golden brown and cooked when tested with a cake skewer
Leave to cool in tin for 10 minutes then transfer to wire cooling rack until completely cooled
Peanut Butter Frosting
Ingredients
1/4 cup butter
1/2 cup smooth peanut butter
2 cups icing sugar
1 teaspoon vanilla extract
2 tablespoons milk
Method
In a medium bowl cream the butter until light and fluffy
Add the peanut butter and beat until fully combined
Add the icing sugar, vanilla and milk a little at a time until the desired consistency has been obtained
Top each cooled cupcake with frosting mix and garnish with grated chocolate
