Cantaloupe is a somewhat overlooked fruit and generally is used as the filler in fruit cups (with half a strawberry and a few blueberries sprinkled on top). But here at For The Love of Breakfast, we certainly do not consider cantaloupe a second-class fruit!? In fact, it is packed with goodness and an excellent source of antioxidants. Cantaloupes contain??Vitamin C and A as well as potassium and folate. And while they are packed full of lots of good stuff, they are also really darn tasty.
In our kitchen, we loved to experiment with smoothies and have spent hours mixing together all different ingredients to find perfect breakfast blends for the blog. As you can see by our image, we were in a tropical mood with our Magnificent Melon Smoothie. Dreaming of summer, we ditched the boring old cup and straw and got creative! Serving smoothies and food in hollowed out shells of watermelon, pineapple, and in this case cantaloupe, is a fun way to bring some color to the table!
In our kitchen, we have been busy experimenting and have hit gold with this sweet and satisfying cantaloupe smoothie. With just a few ingredients, it is simple and easy to make and good for you too! Ingredients:
Half a sweet ripe?cantaloupe
2 tablespoons of natural Greek yogurt
Ice cubes
1 tablespoon of clear honey optional
Edible flowers to garnish, we used celosia
Method:
Remove the seeds from the half of melon
Scoop out the flesh and place in a blender
Add the 2 tablespoons of natural Greek yogurt
Add the clear honey if desired
Blend until smooth
Add ice cubes
Garnish with fresh flowers
