Lemon Poppyseed Muffins

Lemon Poppyseed Muffins
Nothing is as fresh and invigorating than lemon at breakfast time! Whether it be a simple slice with your cup of tea or these delicious lemon poppyseed muffins, lemon is best for breakfast!

Ingredients:

1 Cups flour

? Teaspoon baking soda

? Teaspoon salt

? Cup butter

? Cup sugar

2 Eggs

1 Teaspoon vanilla ?extract

2 Tablespoons of fresh lemon zest

1 Tablespoon fresh lemon juice

1 tablespoon poppyseeds

Method:
  1. Preheat oven to 450 and grease a muffin pan.
  2. In a medium bowl whisk together flour, baking soda, salt and poppyseeds
  3. In a large bowl cream together butter, sugar, eggs, vanilla extract, lemon zest and juice and greek yogurt
  4. Add dry ingredients to wet ingredients and mix until combined
  5. Fill muffin tins about full with muffin batter.
  6. Bake for 20 minutes until an inserted toothpick comes out clean
  7. Leave to cool thoroughly before icing
Icing Ingredients:

2 Tablespoons butter, softened

2 Ounces cream cheese, softened

2 Cups powdered sugar

1-2 teaspoons fresh lemon juice

Fresh lemon zest to garnish

Method:

  1. Cream melted butter and cream cheese for 2 minutes until ?fluffy
  2. Add powdered sugar and lemon juice and mix well
  3. Ice muffins
  4. Sprinkle lemon zest over muffins to garnish
