Will the Easter bunny make a stop at your house tonight? If he does, we hope he leaves some sweet treats like these Easter Egg Chocolate Muffins. Simple and satisfying, these muffins are a slight variation on the vanilla variety but with a tantalizing chocolate twist.
Ingredients:
21/4 cups self raising flour sifted
3/4 cup castor sugar
2 tablespoons of cadbury drinking chocolate sifted
1 free range egg beaten
1/2 cup vegetable oil
3/4 cup of milk
12 mini white chocolate easter eggs
1 Tablespoon of icing sugar to dust
Method:
Pre heat oven 180c
Lightly grease a 12 space muffin tin
Place the flour, sugar and drinking chocolate into a bowl, stir
Make a well in the centre
Combine the oil, egg and milk in a jug
Pour the egg mix into the flour and stir with a metal spoon until just combined
Do not over mix
Place table spoons of the muffin mix into the muffin pan
Bake for 12 -15 mins until golden brown
Cool
Using an apple corer make small holes in the tops of the muffins then place a white chocolate egg in the top
Dust with a little icing sugar
