This ain’t your regular avocado on toast – this delicious breakfast dish is packed with protein and goodness to start your day off right. And… It happens to be very green as we continue our St Patrick’s Day theme this week!
Ingredients:
2 Slices of mulitigrain bread toasted and sliced
1 Avocado mashed
1 Hard boiled egg sliced
3 Asparagus spears steamed
Pistashios and lemon wedge to garnish
Salt and pepper to taste
Method:
- Place the toasted bread onto a serving plate and spread with the mashed avocado
- Lay slices of the hard boiled egg on top then the asparagus spears
- Sprinkle on the pistachios
- Slice
- Add salt and pepper to taste
- Garnish with lemon wedge
