Mix it up with this tasty and nutritious Avocado and Egg Slice. Easy to make and easy on the eye, this dish is packed with protein.
Ingredients:
1 Avocado
2 Boiled Eggs
Salt, pepper and chili flakes to taste
Method:
- Hard boil two eggs, peel and thinly slice with an egg slicer
- Set eggs aside
- Cut avocado in half and remove pip
- Run a flat knife around the avocado meat to separate it from the skin
- Turn each avocado half over and gently squeeze the avocado meat onto a cutting board
- Thinly slice the avocado
- Remove several of the avocado slices and insert egg slices
- Gently place the egg and avocado slices back in the skin
- Place one slice of egg in the avocado pit hole
- Sprinkle with salt, pepper and chili flakes to taste and serve with toast
