Here at For The Love of Breakfast we love almonds. Whether grabbing a handful on the go for a healthy snack, or using them to make the most delicious friands you have ever eaten, we really just can’t get enough.
These Almond Friands are best enjoyed slightly warm with a fair helping of Raspberry Coulis. If you don’t have the ingredients on hand or are running short on time, jam can replace the coulis. But, we do highly recommend that you make the coulis from scratch. It will have a different texture than jam and a much richer taste that enriches the almond flavor.
If you are really craving something sweet for breakfast, try adding a scoop of vanilla bean ice cream to this dish. The warm friand paired with the cool ice cream and coulis is perfection in each bite.
Ingredients
1 1/2 cups icing sugar, sifted
1/2 cup plain flour, sifted
1 cup almond meal
5 free range egg whites, beaten
180g butter melted
1 teaspoon vanilla essence
12 whole blanched almonds
Icing sugar to dust
Method
Preheat oven to 180c
Lightly grease and flour a 12 cup friand tin
Combine icing sugar, almond meal and flour
Add the melted butter and vanilla
Gently fold in the beaten egg whites with a metal spoon until just combined
Do not over mix
Place spoonfuls of the friand mix into the tin
Bake for 16-20 minutes until the tops of the friands are golden brown and cake tester inserted into the centre of the friands comes out clean
Leave in the tin for 10 minutes then cool on wire rack
Dust with icing sugar when cool
Raspberry Coulis
Ingredients
1 1/2 cups raspberries
1/4 cup water
1/2 cup icing sugar
Juice 1 lime
Method
Place all ingredients into a small saucepan
Stirring bring the liquid to the boil
Simmer gently for 3 minutes then remove from heat
Allow to cool then pour the coulis through a sieve
Pour into a serving dish
