Some bunny definitely loves you if they make these delicious muffins for you for breakfast on Easter morning. Light, sweet and with the perfect amount of chocolate, these muffins are easy to bake and will please the family – especially the little ones with their tasty chocolate treat in the middle.
Ingredients
2 1/4 cups self raising flour sifted
3/4 cup caster sugar
1 free range egg beaten
1/2 cup vegetable oil
3/4 cup of milk
1 teaspoon vanilla essence
12 mini chocolate easter eggs
Method
Pre heat over to 180 c
Lightly grease a 12 space non stick muffin tin
Place sifted flour into a bowl and stir in the flour
Make a well in the centre
Combine egg, oil, milk and vanilla essence in a jug
Pour the egg mix into the flour and mix with a metal soon until just combined
Important not to over mix
Place tablespoons of the mixture into the muffin tin and bake for about 12 -15 minutes until golden brown.
Cool muffins
With an apple corer gently cut holes in the top of each muffin and place in a chocolate Easter egg
