Nothing is as fresh and invigorating than lemon at breakfast time! Whether it be a simple slice with your cup of tea or these delicious lemon poppyseed muffins, lemon is best for breakfast!
Ingredients:
1 Cups flour
? Teaspoon baking soda
? Teaspoon salt
? Cup butter
? Cup sugar
2 Eggs
1 Teaspoon vanilla ?extract
2 Tablespoons of fresh lemon zest
1 Tablespoon fresh lemon juice
?Cup plain fat free greek yogurt
1 tablespoon poppyseeds
Method:
- Preheat oven to 450 and grease a muffin pan.
- In a medium bowl whisk together flour, baking soda, salt and poppyseeds
- In a large bowl cream together butter, sugar, eggs, vanilla extract, lemon zest and juice and greek yogurt
- Add dry ingredients to wet ingredients and mix until combined
- Fill muffin tins about full with muffin batter.
- Bake for 20 minutes until an inserted toothpick comes out clean
- Leave to cool thoroughly before icing
Icing Ingredients:
2 Tablespoons butter, softened
2 Ounces cream cheese, softened
2 Cups powdered sugar
1-2 teaspoons fresh lemon juice
Fresh lemon zest to garnish
Method:
- Cream melted butter and cream cheese for 2 minutes until ?fluffy
- Add powdered sugar and lemon juice and mix well
- Ice muffins
- Sprinkle lemon zest over muffins to garnish
