Oaty Jacks

Packed with healthy oats and featuring a sweet sprinkling of cranberry, these jacks can be made ahead of time for a convenient grab and go breakfast or for a sweet treat during the day.

Ingredients:

  • 1 cup rolled oats
  • 1 cup all purpose flour
  • 1/5 brown sugar
  • 3 tablespoons golden syrup
  • 1/2 butter
  • 1 cup dried cranberries
  • 1 teaspoon baking soda
  • Blanched almonds to decorate

 

Method:

  1. Heat oven to 350 Fahrenheit
  2. Prepare 12×8 inch baking tray
  3. In a medium sized saucepan melt the sugar, syrup and butter over a low heat. When melted add baking soda and cranberries
  4. Remove from heat and stir in the flour and oats
  5. Spread into the baking dish and add the blanched almonds
  6. Bake for 20-30 minutes until golden brown
