Coconut Muffins

Coconuts are known for their great versatility and are the main ingredient for many tropical dishes. We love them best for breakfast! Especially in these light and sweet breakfast muffins.

Ingredients:

  • 2 eggs
  • 1 ? cup milk
  • 1 teaspoon vanilla extract
  • 2 ? cups plain flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 cup white sugar
  • 1/5 cup shredded coconut
  • 1/3 cup melted butter

Method:

  1. Preheat oven to 350 Fahrenheit and lightly grease 12-muffin pan or line with patty cases
  2. Lightly whisk eggs, milk and vanilla in a bowl
  3. Sift flour, baking powder and cinnamon in a separate large bowl
  4. Add sugar and coconut
  5. Male well in center of dry ingredients
  6. Gradually stir in egg mixture until combined
  7. Add melted butter
  8. Spoon mixture in patty cases about ? full
  9. Bake for approximately 20-25 minutes or until tops are golden brown
