Roasted Spinach and Pine Nut Tomatoes

Bursting with flavor, roasted spinach and pine nut tomatoes make a hearty and healthy brunch.


4 Ripe tomatoes

1 Bag (12 oz) baby spinach

1/2 Cup pine nuts

1 Tablespoon cooking oil

1/2 Cup blended shredded cheese

Salt and pepper to taste


  1. Pre-heat oven to 350 Fahrenheit
  2. Wash the tomatoes and slice the tops off (creating a lid)
  3. Scoop out the middle of the tomatoes and discard, leaving a shell, set aside
  4. Evenly distribute the pine nuts on a baking tray and roast until golden brown, set aside
  5. In a large saucepan, heat the oil and place the spinach in
  6. Stir until spinach is cooked
  7. Take saucepan off the heat and mix in cheese, pine nuts, salt and pepper
  8. Spoon mixture into tomatoes
  9. Place tomatoes on lightly greased baking tray and put lids back on
  10. Roast for about 20 – 30 minutes
  11. Serve immediately or store in fridge for three days
