Avocado and Egg Slice?

Mix it up with this tasty and nutritious Avocado and Egg Slice. Easy to make and easy on the eye, this dish is packed with protein.

Ingredients:

1 Avocado

2 Boiled Eggs

Salt, pepper and chili flakes to taste

Method:

  1. Hard boil two eggs, peel and thinly slice with an egg slicer
  2. Set eggs aside
  3. Cut avocado in half and remove pip
  4. Run a flat knife around the avocado meat to separate it from the skin
  5. Turn each avocado half over and gently squeeze the avocado meat onto a cutting board
  6. Thinly slice the avocado
  7. Remove several of the avocado slices and insert egg slices
  8. Gently place the egg and avocado slices back in the skin
  9. Place one slice of egg in the avocado pit hole
  10. Sprinkle with salt, pepper and chili flakes to taste and serve with toast
